1, Cinnamon-Apple Pork Chops
Ingredients
- 2 tablespoons reduced-fat butter, divided
- 4 boneless pork loin chops (4 ounces each)
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 4 medium tart apples, thinly sliced
- 2 tablespoons chopped pecans
Directions
- In a large skillet, heat 1 tablespoon butter over medium heat. Add pork chops; cook 4-5 minutes on each side or until a thermometer reads 145°. Meanwhile, in a small bowl, mix brown sugar, cinnamon, nutmeg and salt.
- Remove chops; keep warm. Add apples, pecans, brown sugar mixture and remaining 1 tablespoon butter to pan; cook and stir until apples are tender. Serve with chops.

2, Spiced Pulled Pork Sandwiches
Ingredients
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons garlic powder
- 1-1/2 teaspoons ground cumin
- 1-1/2 teaspoons ground cinnamon
- 1-1/2 teaspoons chili powder
- 1-1/2 teaspoons coarsely ground pepper
- 1 boneless pork shoulder butt roast (3 to 4 pounds), halved
- 2 tablespoons olive oil
- 2 medium onions, halved and sliced
- 8 garlic cloves, coarsely chopped
- 1-1/2 cups water
- 1 tablespoon liquid smoke, optional
- 10 hamburger buns, split and toasted
- Barbecue sauce
- Sliced jalapeno pepper, optional
Directions
- Mix seasonings; rub over pork. In a large skillet, heat oil over medium heat. Brown pork on all sides. Transfer to a 5- or 6-qt. slow cooker.
- In same pan, cook and stir onions over medium heat until lightly browned, 4-5 minutes. Add garlic; cook and stir 1 minute. Add water; bring to a boil, stirring to loosen browned bits from pan. If desired, stir in liquid smoke. Add to pork.
- Cook, covered, on low until meat is tender, 6-8 hours. Remove roast; discard onion mixture. Shred pork with 2 forks; return to slow cooker and heat through. Serve on buns with barbecue sauce and, if desired, jalapeno slices.

3, Sweet Potato and Crab Soup
Ingredients
- 4 tablespoons butter, divided
- 2 medium leeks (white portion only), finely chopped
- 3 garlic cloves, minced
- 4 cups cubed peeled sweet potatoes (about 1-1/2 pounds)
- 1 teaspoon salt, divided
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper
- 5 cups vegetable stock
- 2 cups heavy whipping cream
- 4 teaspoons fresh thyme leaves, divided
- 12 ounces lump crabmeat, drained
- Croutons, optional
Directions
- In a Dutch oven, heat 2 tablespoons butter over medium heat; saute leeks and garlic until leeks are tender, 4-6 minutes.
- Stir in sweet potatoes, 3/4 teaspoon salt, cinnamon, cayenne and stock; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 15-20 minutes.
- Puree soup using an immersion blender or cool slightly and puree soup in batches in a blender; return to pan. Stir in cream and 2 teaspoons thyme; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
- Meanwhile, in a large skillet, melt remaining 2 tablespoons butter over medium heat. Add crab and the remaining salt and thyme; cook 5 minutes, stirring gently to combine. Top servings with crab mixture and, if desired, croutons.
